MAC ‘N CHEESE CRACKERS

My girlfriend took one bite of these and said, “this tastes like Mac ‘n Cheese”.  Voila, the Mac ‘n Cheese cracker was born.  I had been wanting to make more savory snacks and this was a really great place to start.

What I love most about this recipe is that, like sables, these can be made in big batches, baked right away or frozen for future use.  I always have my freezer stocked with cookie doughs, cheesecakes, marinara sauces, pesto, and stock.  Having logs of sables and crackers on hand, makes last minute entertaining, either in our own home or at others, easy and stress free.

Mac ‘n Cheese Crackers

yield: about 60 crackers

ingredients:
3/4 cup flour
1 tsp. salt
1/8 tsp. cayenne
3/4 tsp. black pepper
2 1/3 cup sharp cheddar cheese, grated
1/4 cup unsalted butter
instructions:
• in a mixing bowl, stir together the flour, salt, cayenne, & black pepper.
• in the bowl of a mixer, combine the cheese and butter and beat on medium speed until combined.
• add the flour mixture and beat on low. scrape sides of bowl with rubber spatula.
• transfer the dough to a piece of parchement paper, dusted lightly with flour.  shape the dough into a 1=1 1/2″  log.
• wrap well and freeze about 2 hours ( I doubled the recipe and have more for a later date).
• preheat oven to 400*. line 2 rimmed, baking sheets with parchment.
• cut logs into 1/8″-1/4″ thick rounds. place on baking sheets.
• bake 7-10 minutes or until golden brown. transfer to a wire rack and let cool.
